Bizcocho de Zanahorias - Carrot Cake



¿Zanahorias?, ¿Verduras en un bizcocho? Si, has leído bien. Este bizcocho es sabroso y jugoso. Su miga es suave y esponjosa, con el toque crujiente de nueces. El glaseado ácido y dulce hace este bizcocho riquísimo!
Carrots? Vegetables into a cake? Yes, you'd read well. This cake is flavorful and moist. Its crumb is fluffy, with crunchy touches of walnuts. The tangy and sweet cheese frosting makes this cake yummy!!

No sabía que me gustaban los bizcochos de zanahorias hasta que lo probé el año pasado en Londres. En Inglaterra este bizcocho es tan popular que puedes encontrarlo desde cualquier pequeña cafetería hasta en Starbucks y Cafeterías Costa. Sin embargo, en España no es muy conocido, por eso os animo a probarlo. Un trozo nuca es suficiente!
I didn't know I loved carrot cakes until I tasted it last year in London. In England this cake is so popular that you can find it from any little coffee shops to Starbucks or Costa Coffee. However, in Spain it is not so well-know, that's why I encourage you to try it. One piece is never enough!

No importa si no te gustan las zanahorias, su sabor es casi indistinguible. Además en el proceso de horneado se ablandan, y el bizcocho normalmente tiene una textura suave y densa. Las propias zanahorias realzan el sabor, textura y apariencia del bizcocho.
Don't worry if you don't like carrots, its flavor is almost indistinguishable. Furthermore the carrot softens in the cooking process, and the cake usually has a soft, dense texture. The carrots themselves enhance the flavour, texture and appearance of the cake.




Historia del Bizcocho de zanahorias:
Las zanahorias han sido incluidas en las recetas dulces en Gran Bretaña desde la época Medieval, porque las zanahorias eran una alternativa más barata y más disponibles que otros endulzantes. Su uso fue fomentado durante la Segunda Guerra Mundial, en el tiempo de los racionamientos. El bizcocho de zanahorias sin embargo, no empezó realmente a tener éxito hasta el último cuarto del siglo veinte. Aunque el bizcocho de zanahorias ha sido popular en toda Europa durante centenares de años, solo empezó a aparecer en libros de cocina americanos en 1900 y fue luego en 1960 cuando llego a ser un bizcocho americano común. El Bizcocho de Zanahorias (a veces llamado Bizcocho de la Pasión) fue votado como bizcocho favorito en Reino Unido, según la encuesta de Radio Times en 2011.

History of the Carrot Cake: Carrots have been included in sweet recipes in Britain since medievals times, because carrots provided a cheaper and more easily available alternative to other sweeteners. Their use was encouraged during the Second World War, at the time of rationing. Carrot cake however, didn't really take off in popularity until the last quarter of the twentieth century. Even though carrot cake has been popular over all of Europe for hundreds of years, it only started making appearances in American cookbooks in the 1900s, and it was then only in the 1960s that it became a common American cake. Carrot cake (often referred to as Passion Cake) was voted as the favourite cake in the United Kingdom, according to a survey in the Radio Times in 2011. In 2005, the American-based Food Network listed carrot cake, with its cream-cheese icing, as number five of the top five fad foods of the 1970s.

CONSEJOS:
  • Todos los ingredientes deben estar a temperatura ambiente.
  • Tamiza todos los ingredientes secos antes de añadirlos a la masa.
  • Incluye ingredientes adiciones como pasas, coco, etc.
  • Usa nueces pecanas, almendras ó avellanas en vez de nueces.
  • Da una textura más húmeda: añade 120 ml. de piña triturada ó puré de manzanas a la masa, junto con el aceite y el extracto de vainilla. Posiblemente necesites hornear el bizcocho unos pocos minutos más de lo que dice la receta.
  • Realmente no notaras el sabor de cualquier fruta que añadas, pero el sabor y textura del bizcocho mejorará notablemente.
  • El glaseado: En mi opinión, el glaseado de mi bizcocho era un poco grueso, estaría mejor si tuviera menos grosor. Sugiero hacer 1/2 de la receta del glaseado; es suficiente para las capas. Ó usar la receta para cubrir el bizcocho entero (incluyendo laterales).
  • Glaseado de ricota: este cremoso glaseado es más ligero en grasas que el tradicional, ya que usa queso ricota.
  • Menos azúcar: En vez de este glaseado, puedes extender solo queso cremoso (tipo Philadelphia) en un trozo de bizcocho.
  • Los Bizcochos de zanahorias a veces son decorados con pequeñas zanahorias de mazapán. Pasos para hacer zanahorias de mazapán:Recipe Girl (esta en ingles), vídeo.
  • Puedes hacer un bizcocho y con un cuchillo serrado, cortarlo horizontalmente por la mitad. Probablemente ayude refrigerarlo ó congelarlo un poco antes de intentar cortar las capas.
  • Para esta receta realmente no necesitas un batidor eléctrico, puedes batirlo a mano con un batidor y esfuerzo manual.
  • Puedes tostar las nueces ó nueces pecanas durante 8 minutos ó hasta que ligeramente se doren y desprendan fragancia. Dejar enfriar y luego trocearlas toscamente. (NOTAeva: esto lo salté. Puse las nueces directamente picadas de la bolsa).
TIPS:
  • All ingredients must be at room temperature.
  • Sift all dry ingredients before add to the batter.
  • Include optional ingredients such as raisin, coocunt, etc.
  • Use pecans, almonds or hazelnuts instead of walnuts.
  • Give more moisture texture: add 1/2 cup (120 ml.) of either crushed pineapple or applesauce to the batter, right along with the oil and vanilla extract. Take note, though, that you may need to bake the carrot ckae a few minutes longer than the recipe states.
  • You won't really taste any of the fruit but the flavor and texture of the cake would be greatly improved.
  • The frosting: My top frosting layer was a little thick in my opinion, it would be better if it had less thickness. I suggest making 1/2 of the glaze recipe; it is enough for the layers and the top. Or use the recipe to cover the whole cake (including the lateral).
  • Ricotta icing: The creamy icing here is lighter in fat than a traditional one, as it uses ricotta cheese.
  • Less sugar: Instead of icing it, you can just spread some cream cheese on a slice. (Cat can cook)
  • Carrot cakes is often garnished with little marzipan carrots. Steps to make them: Recipe Girl /vídeo.
  • You can make a cake and with a serrated knife, cut each cake horizontally in hafl. It probably would have helped to refrigerate or freeze the cake a bit before trying to cut it into layers.
  • For this recipe you don't really need a mixer, you can beat by hand with a whisk and a good effort manual.
  • You can toast the walnuts or pecans for about 8 minutos or until lightly browned and fragant. Let cool and then chop corarsely. (I missed out this step)

Bizcocho de zanahorias / Carrot Cake
Ingredientes para el bizcocho:
  • 1 taza (100 gr.) nueces pecanas ó nueces
  • 3/4 libras (340 gr.) zanahorias cruzas (sobre 2+1/2 tazas) finamente rallada
  • 2 tazas (260 gr.) harina de trigo (multiuso) (NOTAeva: usé harina de repostería)
  • 1 cucharadita de bicarbonato sódico
  • 1+1/2 cucharadita de levadura (química ó en polvo, Royal)
  • 1/2 cucharadita de sal
  • 1+1/2 cucharadita de canela molida
  • 4 huevos grandes
  • 1+1/2 tazas (300 gr.) azúcar blanca granulada
  • 1 taza (240 ml.) aceite de girasol (ó cualquier aceite suave)
  • 2 cucharaditas de extracto de vainilla.
Ingredients for the cake:
  • 1 cup (100 grams) pecans or walnuts
  • 3/4 pound (340 grams) raw carrots (about 2+1/2 cups) finely grated
  • 2 cups (260 grams) all-purpose flour
  • 1 teaspoon baking soda
  • 1+1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1+1/2 teaspoons ground cinnamon
  • 4 large eggs
  • 1+1/2 cups (300 grams) granulated white sugar
  • 1 cup (240 ml.) safflower, vegetable or canola oil (or other flavoless oil)
  • 2 teaspoons pure vanilla extract
Glaseado de crema de queso:
  • 1/4 taza (57 gr.) mantequilla sin sal, a temperatura ambiente
  • 8 onzas (227 gr.) queso en crema, a temperatura ambiente (Use mascarpone)
  • 2 tazas (230 gr.) azúcar glass
  • 1 cucharadita (4 gr.) extracto de vainilla
  • 1 cucharadita de ralladura de limón (solo la parte amarilla) (opcional)
Cream Cheese Frosting:
  • 1/4 cup (57 grams) unsalted butter, room temperature
  • 8 ounces (227 grams) cream cheese, room temperature (I used mascarpone)
  • 2 cups (230 grams) confectiones (powdered or icing) sugar, sifted
  • 1 teaspoon (4 grams) pure vanilla extract
  • 1 teaspoon finely grated lemon zest (outer yellow skin) (optional)
Elaboración / Method
1. Precalienta el horno a 180ºC (350ºF) y coloca la bandeja el horno en el centro.
1. Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven.

2. Pela y ralla finamente las zanahorias. (NOTAeva: puedes usar un rallador de queso)
2. Peel and finely grate the carrots. (NOTAeva: You can use a box cheese grater)


3. En otro bowl bate todo junto (los ingredientes secos) : harina, bicarbonato sódico, levadura, sal y canela en polvo.
3. In a separate bowl whisk together (dry ingredients) the flour, baking soda, baking powder, salt, and ground cinnamon.

4. En el bowl de la batidora (ó con la batidora manual), bate los huevos hasta que estén espumosos (sobre 1 minuto).
4. In bowl of electric mixer (or with a hand mixer), beat the eggs until frothy (about 1 minute).


5. Gradualmente añade el azúcar y bate hasta que la masa espese y adquiera un color blanquecino (sobre 3 - 4 minutos).
5. Gradually add the sugar and beat until the batter is thick and light colored (about 3 - 4 minutes).


6. Añade el aceite en forma de hilo constante y luego bate con la vainilla.
6. Add the oil in a steady stream and then beat in the vanilla extract.


7. Incorpora la mezcla de harina y bate solo hasta que se incorpore.
7. Add the flour mixture and beat just until incorporated.


8. Con una espátula larga de plástico incorpora las zanahorias ralladas y las nueces picadas (NOTAeva: con movimientos envolventes).
8. With a large rubber spatula fold in the grated carrots and chopped nuts(NOTEeva: with smooth movements).


9. Unta con mantequilla ó aceite en spray dos moldes de bizcocho de 23 x 5 cm (NOTAeva: usé uno de 21 cm.) y forra el fondo con papel de hornear.
9. Butter or spray two - 9 x 2 inch (23 x 5 cm) cake pans and line the bottoms of the pans with a
circle of parchment paper.


10. Divide equitativamente la masa entre los dos moldes preparados y hornea unos 25 a 30 minutos ó hasta que insertando un palillo en el centro salga limpio.
10. Evenly divide the batter between the two prepared pans and bake 25 to 30 minutes or until a toothpick inserted in the center comes out clean.


11. Sacar del horno y dejar enfriar sobre una rejilla. Después de 5 minutos dale la vuelta al molde sobre una rejilla, retira los moldes y el papel de hornear. Dejar enfriar completamente antes de añadir el glaseado.
11. Remove from oven and let cool on a wire rack. After about 5 - 10 minutes invert the cakes onto the wire rack, remove the pans and parchment paper, and then cool completely before frosting.



Glaseado de crema de queso: En el bowl de la batidora (ó con una batidora manual), bate la crema de queso y la mantequilla, a baja velocidad, hasta que la mezcla no tenga grumos. Gradualmente añade el azúcar glass tamizada y bate, a baja velocidad, hasta que este totalmente incorporada y suave. Bate con el extracto de vainilla, y la ralladura de limón.
Cream Cheese Frosting: In bowl of electric mixer (or with a hand mixer), beat the cream cheese and butter, on low speed, just until blended with no lumps. Gradually add the sifted powdered sugar and beat, on low speed, until fully incorporated and smooth. Beat in the vanilla extract, and lemon zest.


El montaje: coloca uno de los bizcochos sobre el plato donde lo vayas a servir. Extiende la mitad del glaseado. Con cuidado coloca el otro bizcocho encima del glaseado y extiende el resto del glaseado sobre la parte de arriba del bizcocho. Si lo deseas, decora con nueces tostadas sobre la parte de arriba. Refrigerar algunas horas.
Rinde 10 - 12 unidades más o menos.

To assemble: place one cake layer onto your serving plate. Spread with about half the frosting. Gently place the other cake onto the frosting and spread the rest of the frosting over the top of the cake. If desired, garnish with toasted nuts on the top of the cake. Cover and refrigerate any leftovers. Serve 10 - 12.

muy buen paso a paso me ha encantado! yo suelo hacerlo mucho tambien, pero sin el glaseado no se porque pero al final nunca lo hago!

Hola Eva! No me habia enterado que habias vuelto, desde que empezaste he seguido tus recetas y ahora que ya estas de nuevo aqui las retomaré. Este pastel de zanahorias siempre me ha llamado la atención pero aun no me he atrevido a hacerlo, ya va siendo hora. Te ha quedado genial. Me alegro de tu vuelta y espero que hayas disfrutado todo este tiempo en tierras inglesas.
